Glazed Salmon with Broccoli: Recipe: Shopkick


Glazed Salmon with Broccoli
Heat broiler. In a small bowl, combine the sugar and soy sauce. Set aside. Cook the rice according to the package directions, stirring in the broccoli during the last 3 minutes. Let the rice and broccoli stand off the heat until the broccoli is tender, about 5 minutes. Fluff with a fork. Meanwhile, place the salmon and onion on a rimmed baking sheet. Drizzle with the oil and season with ½ teaspoon salt and ¼ teaspoon pepper. Broil until the salmon is opaque throughout, 8 to 10 minutes, spooning half the soy sauce glaze over the fish during the last 2 minutes of cooking. Serve the salmon and onion with the rice and the remaining glaze. Recipe courtesy of realsimple.com

Cheese Sausage Dip

Walmart and Target

What You Need:

3/4 lb. hot Italian sausage links, casings removed
1/3 cup EACH finely chopped green and red peppers
2 Tbsp. flour
2 cups whole milk
2 cups shredded pepper jack cheese
Serve with WHEAT THINS Big Snacks

Make It:

CRUMBLE sausage into large skillet; cook on medium-high heat 2 min., stirring frequently. Add peppers; cook and stir 1 min. or until sausage is done.
REMOVE sausage mixture from skillet with slotted spoon; set aside. Whisk flour into drippings in skillet until blended; cook and stir 1 min. Gradually stir in milk until blended. Bring to boil; simmer on medium-low heat 2 min., stirring occasionally. Return sausage mixture to skillet.
ADD cheese; cook 2 min. or until melted, stirring frequently. Serve with WHEAT THINS.
Bonus Tip: You can also prepare using shredded white Cheddar cheese.

Prep Time: 30 min, Total Time: 30 min. Makes: 32 servings, 2 Tbsp. dip and 11 pieces each

Serves: Makes about 2 cups
Ingredients
  • 2 eggplants
  • 3 tablespoons tahini
  • 2 tablespoons fresh squeezed lemon juice
  • 2 cloves of garlic, grated with a microplane or finely minced
  • Salt to taste
  • Optional: top with olive oil, pomegranate seeds, sesame seeds or minced parsley
Instructions
  1. Using a fork polk several holes over each eggplant.
  2. Place eggplants on your bbq at high heat. Alternatively you can broil them in your oven for a slightly less smokey flavour.
  3. Cook eggplants for 20-30 minutes, turning once, until they are soft but well charred on the outside.
  4. Remove eggplants from bbq and place in a bowl covered with tin foil.
  5. Once eggplants are cool enough to handle (you can place them in your fridge if you get impatient, like me) peel the skin off and place all the flesh in a bowl. Add any of the liquid left in the bowl the eggplants were cooling in to the eggplant flesh.
  6. Place all the eggplant flesh and liquid into a food processor. Add tahini, lemon juice, garlic and salt and process till smooth. You can also use a fork for a chunkier texture.
  7. Place baba ganoush in a bowl and top with optional ingredients if desired.
